Pitty Pat Squash All in one Dinner
One of my favorite things to do on Saturday Morning, during the months of May-Sept. is to go to our local farmers Market for fresh vegetables. This past Saturday on a visit there, I found a new squash called “Pitty Pat Squash”.
I purchased 2 rather large squash. The lady I purchased them from told me how she cooked this squash, so I took her recipe and added some of my own ideas. I cooked both for dinner. It turned out pretty good. My husband, son and I ate 1 squash. I am sure you could add another vegetable to the meal, however I served the one dish as a meal. I did offer worcestershire sauce, ketchup, pickles, and olives, which complemented the meal very well. I hope you enjoy:
Pitty Pat Squash All in one Dinner
You will need:
2- Pitty Pat Squash
1 LB ground chuck
1 small onion
1 small bell pepper
1/2 cup quick oats
2 eggs
1/2 cup sharp cheddar cheese
garlic powder to taste
salt and pepper to taste
Directions
1. On stem side of squash, Cut the center out leaving the scalloped edges. Pull out as many seed as you can. (If some is left behind, no problem, they actually were very tasty) Chop the removed center into small pieces and boil for 10 min.
2. Mix meat, onion, pepper, oats and eggs and seasoning together. Add in the boiled squash.
3. Loosely add the meat mixture into the outer shell of squash.
Bake in oven at 350 for 1 – 1 1/2 hours. Checking often. Meal is ready when squash is tender. Cut into 4 pie shaped pieces.
*If you have any meat mixture left over, Make some mini meat loafs in muffin pan.
* Wrapped 2nd squash in foil and refrigerated for leftover meal tomorrow.
