Quick and Easy Fall Recipe

Fall is here!!!! Fall is my favorite time of year. I really enjoy the beautiful painted leaves of nature and the cooler temperatures. It seems fall is the season of festivals and football.  With football comes food and friends. The thoughts of hot soups and Chili comes to mind. I want to share a quick and delicious chili dish recipe just right for fall.  This recipe is great when having friends over to watch the big game or just right for a quick and easy dinner  after a busy day.

 Corney Chili Casserole

Ingredients:

3 cups of chili

1/2 medium onion

3/4 cup shredded cheddar cheese

1 can corn drained

1 can tomato Rotel drained

1 box of Jiffy cornbread mix

 

Directions:

* You can use leftover homemade chili or buy a good brand of canned chili.

Preheat oven to 425 degrees

1.Chop onions and saute in a small amount of olive oil.

2.While onions are cooking mix chili, cheese, drained corn and Rotel.

3.Mix cornbread according to instructions.

4.When onions are tender add to chili mixture.

5.Pour chili mixture into casserole dish.

6.Spread cornbread over top of chili mixture.

7.Bake in heated oven for 25-30 minutes. Make sure cornbread is cooked thoroughly.

Serve with fresh green salad or serve as a single dish meal.
